The first thing that you have to observe is the proper way of holding the wine glass. Remember to hold at the stem and not at the bowl since the heat of your hand may warm the wine. Another thing that you have to take note is the succession of the wines to be tasted. Begin with the lightest white wines and progress to the heavy red wines. You can take sips of water in between taste to keep your palate sensitive.
Then, pour an inch or less of wine into the glass and do the following steps:
- Look at the wine. For better viewing, this should be done in daylight but if not, then a well-lit room may be enough. Hold your glass up to a white background and assess the colour and clarity of the wine.
- Swirl the wine in the glass for 10 to 20 seconds. The idea of this step is to increase the surface area of the wine, exposing it to oxygen. The wine's alcohol is then vaporised, releasing rich aroma.
- Smell the wine. 80% of our sense of taste is in our nose so smelling is an essential step. Tilt the glass, set your nose in it, and then inhale. Try to sense common aromas such as berries, flowers, spices and fruits. You can sniff several times since there are complex wines that give off distinct aromas every time.
- Take a sip and savour the wine. Perform this step after you have used all the other senses. Begin by taking a small sip, and then allow the liquid to spread across the tongue. You can taste a cocktail of flavours—sweet, salty, sour and bitter.
- Spit or swallow. After swallowing the wine, try to detect the aftertaste or how long the impression of the wine will linger on your palate. However, if you are to taste several wines, spitting is usually the option.
